Buy some
Seville oranges, apparently they originate from Vietnam where they are prized for their bitter taste and medicinal qualities
Squeeze out the juice and pips and much of the pith and keep it all
cut into slices and cook for 2 hours (keeping pips and pith separate) then add sugar and cook some more
fill your sterile jars and leave to set
